We cannot avoid the times when we
have to hurry up and just settle for what is available. (Available on the table
and not about anything else.J)
What can I say? Isn’t it the
reason behind the instant and canned foods getting huge sales?
Working moms are not alone in
this scenario, because even I, who spend my whole day everyday with my child,
feel guilty of it. In one of my previous blogs, I have stated that it was a
nightmare for me when my child only eats instant noodles, luncheon meat and
even spicy tuna. She learned such tasty foods because there were times when I
did not have time to prepare the fresh ones for her. My reason? I still have a
laundry to finish, I still have to clean the bathroom, I still have to give her
a bath, etcetera, etcetera. “This is totally wrong,” I said to myself and then
I became desperate, crying to her, “Please eat these nutritious foods.”
It was then when I started to
research about healthy yet tasty and attractive foods for kids. It was also
right on time when Aisha’s pediatrician gave me a small booklet with different
recipes of vegetables and fruits that I can serve to my daughter. At first I
needed a help from vitamins with high content or at least with lysine to
stimulate her appetite and then I began to serve only the freshly cooked food
for her, no biscuits, in between meals and no bottled milk if it’s almost meal
time.
Now, I am sharing these simple,
healthy meals that I have tried and you can serve for your little
kids as you train them to ingest only the good food, good drinks, and nothing
else. You can have new recipes everyday or every week from my succeeding blogs and I
promise to only post those that will help your child eat right.
Here we go.
To begin with, know that: It is VERY IMPORTANT to serve
your kids, slices of fresh fruits or vegetables together with each food that you
serve. These complete your 100% healthy meals.
KINUNOT: A tasty filipino
dish, native in Bicol. Bicolanos often use the exotic sea foods like sharks and
sting rays. But since we cannot buy them in the market, my brother-in-law
taught me to use fish fillets.
BENEFITS OF THE INGREDIENTS TO YOUR KIDS
Coconut Milk may not be rich in Calcium, yet rich in Phosphorus which our body needs to strengthen our bones.
Malunggay Leaves are rich in Vitamins A, C, Calcium, protein and Zinc.
You will need:
Cream Dory (may be bought in different supermarket)
Gata (Coconut milk)/ Evaporated milk (which of the two is
available in your kitchen)
Ginger (sliced but not minced)
Malunggay leaves
Green Chili/ Sili
Garlic
Onions
Salt and pepper to taste
*I did not and will never indicate how much you will need
for each ingredient because you as moms are very wise in scaling these
according to your family’s taste buds and consumption*
You will do:
(1) Prepare
hot water and sprinkles of salt in the kettle. When it’s boiling hot pour it on
the cream dory to lessen its fishy odor and taste.
(2) Slice
the cream dory into small pieces
(3) Sautee
ginger and cream dory. Squeeze the cream dory as it is being cooked. Your goal
is to make it into bits and pieces.
(4) When
they are cooked, add the onions and garlic
(5) Add
salt and pepper while stirring it and waiting for the onions and garlic to be
cooked
(6) Pour
Gata/ evap milk and let it simmer until every thing is totally cooked
(7) Put
Malunggay leaves and green Chili/ Sili
(8) You
can pour a bit water at most is ¼ or less cup or just let gata/evap milk serve
as the soup of the dish or you can serve it dry (like stir fried)
(9) Let
it simmer again until you are satisfied with the taste
Tips: Cream dory is preferred to be
frozen so it will be easier for you to squeeze it into bits and pieces.
Green Sili and Malunggay leaves will balance the taste of the food so it
is better to have it. Green sili by the way will not make your Kinunot spicy
unless it is sliced
